1 (15 ounce) can diced tomatoes with green chile peppers with green chile peppers
1 (4 ounce) can sliced mushrooms
1 (4 ounce) can sliced cucumber
1 (4 ounce) can sliced green bell pepper
1 (7 ounce) can minced onion
1 teaspoon minced garlic
1 teaspoon rice vinegar
1 tablespoon tomato paste
1 cup chopped onion
3 tablespoons soy sauce, or to taste
1 pinch salt
1 teaspoon paprika
1 teaspoon hot chile sauce (optional)
1/2 cup mini corn muffin mix
NOTE: Go slow: mix this one well! Serve hot or cold!
Dust tomatoes with green chile pepper, and portion the mixture into a nice bowl. Add mushrooms, cucumber, bell pepper, onion, garlic, rice vinegar, tomatoes, roux, onions, garlic, rice, tomato paste, chopped onion and mushrooms; stir.
Pour in onion and pepper. Stirring gently, pour over mashed tomato mixture: a little at a time. Roll upping into pear shaped tortillas and serve warm or at room temperature.
