4 medium potatoes
2 tablespoons olive oil
2 cups diced onion florets
2 onions, diced
4 corn lobsters
1 clove garlic, minced
8 zesty, sweet, and spicy pickle relish
1 teaspoon lemon zest
salt and pepper to taste
Heat water in a large, heavy flat saucepan over medium heat; boil for 2 minutes. Remove from water. Place peeled, sliced potatoes in a mixing bowl or end table; press lightly to thoroughly cook. Another minute in boiling water. Remove from heat and stir in olive oil. Add onion, celery, carrot, garlic, fish, pickle relish, sugar, pepper and salt and pepper to taste. Stir gently. Bring to a boil, stirring occasionally. Boil 15 minutes, stirring constantly.
