2 3/4 cup apple vinegar
4 small eggs
2 tablespoons cold water
1 (8 ounce) package cream cheese, softened
1/2 cup boiling water
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, beat vinegar, eggs, and water until smooth. Beat in cream cheese until fluffy, stir fruit mixture into vinegar mixture and beat coconut cream cheese until blended.
Egg wash on bottom/side of 12 9 inch round cake pans; sprinkle with 1/4 tsp caster sugar. Bake cake 15 minutes in the preheated oven, until golden brown edges are crisp. Cool on wire rack.
