Granny's Potato Soup Recipe


1/2 cup butter

1 cup yellow cornmeal

1 cup white sugar

2 tablespoons baking powder

1 cup water

1 teaspoon baking soda

1 cup crushed potato

1/2 cup cooked ham, diced

1/2 cup diced onion

1 teaspoon dried parsley

1 cup chopped celery

1 cup chopped celery

1/2 cup chopped Swiss cheese

8 slices Swiss cheese by 4 - 1 inch round (1 inch thick) bread


Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine the butter, cornmeal, sugar, baking powder, water and baking soda. Mix together and set aside.

In a small mixing bowl, mix together the coffee, eggs, bread cubes, bacon, eggs and parsley.

Beat the 3/4 cup mashed potato into the remaining 1/2 cup of cornmeal. Stir in the ham, onion, parsley, celery and Swiss cheese. Pour mixture into a 9x13 inch baking dish.

Bake uncovered, in preheated oven for 30 minutes.

While baked, prepare potato soup by combining the soup custard, potato salad, ham and onion. Serve hot or cold.
