4 slices bacon
2 tablespoons chopped onion
2 tablespoons chopped celery
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chopped fresh parsley
3 tablespoons olive oil
1 pound ham, cut 1 inch thick slices
1 (10 ounce) package frozen mixed vegetables
2 (10 ounce) packages sliced pepperoni, divided
1 (10 ounce) package shredded mozzarella cheese
6 slices Swiss cheese
Place bacon in a deep skillet. Cook over medium heat until evenly brown. Remove bacon and place in a large bowl in a large resealable plastic bag or container; crush bacon with a rolling pin cheese slicer after each use.
Heat olive oil in a large saucepan over medium heat. When oil begins to sizzle, add ham slices and onion and saute until glossy. Add celery, thyme, parsley, olive oil and pepperoni. Toss to coat.
Instant bacon drippings can be pulled from ham and may be flaked while grilling. Stir in cheese and bacon mixture. Drain excess bacon grease.
