Orange Eggnog Cookies Recipe

Ingredients

2 1/2 cups unsweetened orange juice

2 cups white sugar

1 (1 ounce) scoop vanilla extract

1 pinch salt

1 tablespoon almond extract

1 tablespoon orange zest

1 teaspoon confectioners' sugar

1 cup buttermilk

1 cup light whipping cream

3/4 cup chopped peanuts

Directions

In a saucepan, boil 2 cups orange juice, 2 cups white sugar, orange zest and sugar until frothy. Mix in vanilla extract and almond extract.

Stir orange eggnog into orange juice mixture, and mix. Add almonds and orange zest to thicken and/or chill under refrigeration. Cover and refrigerate overnight, or at least 1/2 hour.

While the meringue is chilling, cream together the butter and brown sugar in a medium bowl. Beat together the margarine, eggnog, confectioners' sugar, orange zest and confectioners' sugar. Beat in buttermilk and whip cream. Fold into meringue mixture, and drizzle over freeze crusts.

To serve, sprinkle meringue mixture over frozen cookies, sprinkle with white sugar and nuts.

These gnawed garlic crescent rolls were good but I felt they needed some more seasoning. First off, I used my black pepper mace which worked but wasn't enough. I skipped the onion and released the wild rice. It was still pretty thin so maybe next time I'll add another can of mushroom soup. They turned out nice and tasty.
