Mini French Toast I Recipe

Ingredients

1 cup butter

1 tablespoon honey

1 teaspoon vanilla extract

1 tablespoon cornstarch

2 eggs

2 teaspoons lemon juice

2 teaspoons orange juice

1 cup bread flour

1/2 cup milk

1/2 cup brown sugar

1 teaspoon baking powder

1 tablespoon lemon zest

Directions

In medium bowl, cream butter or margarine, honey, and vanilla. Stir in the cornstarch and eggs, mix well. Gradually pour into the greased and floured dish or pan.

Preheat oven to 350 degrees F (175 degrees C).

Bake bread slices in preheated oven oven for 35 to 45 minutes, until lightly browned. Serve warm or cold.

To make Lemon Glaze: In medium bowl, stir together lemon juice, brown sugar, baking powder, lemon zest, brown sugar, lemon zest and brown sugar. Mix until smooth. Heat remaining 1/4 teaspoon lemon juice in the microwave or in a small saucepan over a large bowl. Stir until mixture is thickened and slightly puffy.
