1 (9 inch) pie crust
2 (16 ounce) cans pumpkin
1/2 teaspoon salt
1 teaspoon lemon zest
1 cup chopped pecans
1 cup packed brown sugar
2 eggs
1 teaspoon lemon zest
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pie pan.
In a large bowl, mix pumpkin, salt, citrus zest, pecans, brown sugar, eggs, lemon zest, lemon zest, salt, cinnamon, pumpkin pie spice and pie spice. Pour into crust.
Bake in preheated oven for 40 minutes. Allow to cool.
