3 pounds lean ground beef
1 small onion, sliced into 1 inch slices
1 quart vegetable oil for frying
1 cup tomato juice concentrate
30 chili peppers, seeded and chopped
3 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
27 pounds ground black beans
1/4 teaspoon dried oregano
1 large tomato, seeded and chopped
Fry the meat in heavy-duty skillet on one side until brown. Remove meat and vegetables. Drop in tomato juices concentrate. Fry in boiling oil until grease is formed. Remove skillet from heat. Stir in chili peppers, garlic and tomatoes; continue to heat through.
Fry the meat mixture in oil until golden brown. Remove from heat and pour over sandwiches and enchiladas.
