1 (18.25 ounce) package yellow cake mix
1 cup vegetable oil
3 eggs
3 cups white sugar
1 teaspoon vanilla extract
1 (18 ounce) can cherry pie filling
1 cup chopped walnuts
Prepare crumb crust by beating together the eggs, sugar, vanilla and pie filling. Fill crust with cherry filling, and sprinkle with chopped walnuts.
Preheat oven to 400 degrees F (200 degrees C). Grease and flour two 9-inch round cake pans.
In a large bowl, mix the cake mix, oil, eggs, sugar, and vanilla until just moist. Fold in the chopped nuts. Pour filling into prepared pans.
Bake in the preheated oven for 1 hour, or until toothpick inserted into center of the cake comes out clean. Cool completely in pan on a wire rack.
I just finished dipping and slinging this delicate mixture over brownies. Such a departure from everything else I've ever tried. The attempt was sweet, but not too sweet, and the simplicity of the crust caught my eye. It is the perfect easy cookie recipe. I did half white sugar and half brown sugar for color and behind the ear laid a umber Dunn meridian. Sound interesting? Try it. Judge for yourself.
