Easy Lemon Pecan Pie Recipe

Ingredients

1 (9 inch) prepared chocolate cookie crumb crust

1 (17 ounce) can diced fresh pineapple with juice

1 (6 ounce) can crushed pineapple juice

1 (3.3 fluid ounce) jigger lemon-lime flavored carbonated beverage

Directions

Pour pineapple juice in a blender or food processor, bringing to a puree. Taste and adjust the sugar and lemon zest. Pour mixture into crust.

Preheat oven to 300 degrees F (150 degrees C).

Return pineapple to mixing and add lemon-lime soda. Pour mixture into pie shell.

Bake in preheated oven for 30 minutes, uncover pie until cool enough to handle. Place on site. Serve hot.

I gave this 5 starts as it was so easy to make. I love the cookie crust and did press it a bit up the sides. I also added a tbsp of vanilla extract and a tsp of nutmeg. I kept the crust prettyoooey and smooth. It came out perfect--wonderful texture and wonderful taste. i might like this again.
