1 (9 inch) prepared chocolate cookie crumb crust
1 (17 ounce) can diced fresh pineapple with juice
1 (6 ounce) can crushed pineapple juice
1 (3.3 fluid ounce) jigger lemon-lime flavored carbonated beverage
Pour pineapple juice in a blender or food processor, bringing to a puree. Taste and adjust the sugar and lemon zest. Pour mixture into crust.
Preheat oven to 300 degrees F (150 degrees C).
Return pineapple to mixing and add lemon-lime soda. Pour mixture into pie shell.
Bake in preheated oven for 30 minutes, uncover pie until cool enough to handle. Place on site. Serve hot.
