Coconut Cream Pie VIII Recipe

Ingredients

1 tomato, diced

2 tablespoons vodka

1 green tomato, diced

2 tablespoons vegetable oil

1 egg, beaten

1 cup chopped pecans

Directions

In a large bowl, mix tomatoes, vodka, green tomato, oil, egg and chopped pecans.

Heat oil in a large saucepan over medium heat. Add the tomato mixture and green tomato sauce. Mix together well and reduce heat to medium-low. Simmer for 2 minutes or until liquid is reduced, stirring occasionally. Remove from heat and stir in whipped cream, coconut cream or whipped cucumber until well mixed. Pour mixture into pie shell. Chill at least 3 hours before serving.
