1 (3 ounce) package cream cheese, softened
2 (8 ounce) packages frozen mixed vegetables, thawed
1 (8 ounce) container sour cream
2 teaspoons white sugar
1 pinch salt
1/2 teaspoon vanilla extract
1 1/2 cups rolled fresh strawberries
2 egg yolks
In a medium bowl, mix the cream cheese, vegetables and sour cream. Spread mixture into two 2 inch round pie pans. Sprinkle with sliced strawberries, then top with sugar, salt and vanilla.
Beat egg yolks with 1/4 cup of the sour cream mixture until stiff, then fold into the yolk mixture. Pour mixture over pie in 10 small batches. Chill in refrigerator before serving.
