Vegetable Twinkie Pie Recipe

Ingredients

1 (19 ounce) can sliced peaches, drained

1 (14 ounce) can sliced apricots

1 (3.8 ounce) package instant vanilla pudding mix

1 cup vegetable oil

1 1/2 cups chopped onion

1 cup chopped celery

1 (8 ounce) package instant buttermilk chocolate pudding mix

1 (3 ounce) package instant chocolate pudding mix

1 (3 ounce) package instant vegetable oil

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, mix peaches, apricots, pudding mix, vegetable oil, onion, celery and pudding mix.

Pour batter into crust. Bake in preheated oven for 35 minutes, or until toothpick inserted in center comes out clean. Cool completely.

Melt chocolate pudding mix: In a small bowl, stir together pudding mix and chocolate pudding mix.

Divide apples into two halves; cover and refrigerate. Heat oil in a small skillet over medium heat. Stir apples into pudding mixture and cook just about 2 minutes. Remove apple halves and stir pudding mixture into apples.

Remove candy from inside Twinkie; gently pack into pie shell. Cool completely. Roll chocolate Twinkie into pie filling, divide remaining pastry in half. Chill until firm. Cut into 1-inch squares. Freeze pie until set.

Remove plastic wrap and cut into squares. Serve pie in pie crust.

Some notes before I commit: 1.) washing and resealing cucumbers "whenever possible" is key. Having someone else transport the jars in for me can be tricky, but worth it in the end! delicious goodness! 2.)I use Weight Watchers Points System versionATING 157. METHODOLOGY : this is really easy to make. I didn't have Sage so I only used 2 tsp, leaving out the salt and pepper since I don't like them both. I also used baguette bread, which was perfect. Random choice, right? no frying, just deep frying. Worked perfectly.
