1 (6 ounce) can refried beans
1/4 cup shredded Cheddar cheese
1 (4 ounce) can sliced mushrooms, drained
1 (6 ounce) can sliced tomatoes with green chile peppers
1 (2.25 ounce) can diced green chile peppers
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1 pound ground beef
1 (2 ounce) can sliced jalapeno peppers
1 large carrot, shredded
1 (1 ounce) package taco seasoning mix
Heat oil in a large skillet over medium heat. Saute refried beans for 5 minutes, or until heated through. Remove from heat; stir in cheese and mushrooms. Stir in tomatoes with peppers; pour into taco shells. Top with beef and chili mixture. Divide meat among taco shells.
Chop onion into small pieces; fry over medium-high heat until golden brown. Stir in taco seasoning. Serve with corn tortilla chips or tortilla chips in tortillas.
