1 (1 ounce) package cream cheese, softened
1 cup chopped onion
2 cups milk
2 (4 ounce) cans pepper jack cheese
2 tablespoons white sugar
1 (3 ounce) package corn muffin mix
1/2 cup shredded mozzarella cheese
2 (1 ounce) packages cream cheese, softened
1 cup shredded Cheddar cheese
In a medium bowl, mix cream cheese, onion, milk and pepper jack cheese until smooth. Shape into 12 small or mini muffin patties. Transfer to greased or resealable plastic bag. Chill overnight, or chill and cut into 1/4 inch slices. When ready to serve, place in greased or resealable plastic bag with cream cheese mixture. Fill cups with crushed corn muffin mix and cheese mixture. Serve small or over medium tortillas or pizza.
