Potato Pie IV Recipe

Ingredients

6 "large baking potatoes, cubed

1 large onion, diced

5 eggs, beaten

1/2 teaspoon salt

salt to taste

3 tablespoons butter, softened

1 tablespoon brown sugar

Directions

Preheat oven to 450 degrees F (220 degrees C).

Place potato cubes in a large bowl and address hot water to prevent sticking. Cover and let stand overnight in the refrigerator.

Melt butter in a medium saucepan over medium heat. Add brown sugar and salt, stirring until mixture is syrupy. When mixture starts to thicken, add eggs and salt mix thoroughly.

Spoon potato mixture onto slices of pie crust. Chill completely before serving.

Changes I Made: I used 2 asparagus tips and seeded and quarter sliced asparagus ends. I may lessen the sugar later on, but only because I'm unhappy with the current quantities . I added garlic powder when I entered the smoker at some point and kept it under 2 tablespoons. I may reduce the sugar later on, but only because I'm not happy with the current amounts.
