Salados de Chile Recipe

Ingredients

1 medium head lettuce, sliced

1 medium head cabbage, sliced

1 large red onion, sliced

1 medium head celery, sliced

1 medium head romaine lettuce, sliced

1 large tomato, diced

1/2 medium onion, diced

1 (16 ounce) can whole peeled tomatoes

4 slices bacon

1 slivered almonds

1 (6 ounce) can tomato paste

1/4 cup margarine, divided

1 large tomato, sliced

1/4 teaspoon salt

1 teaspoon ground black pepper

2 tablespoons grated lime zest

2 teaspoons olive oil

Directions

Place a medium weight Spanish baguette in the bottom of a large bowl. Place 1 slice of lettuce, cordoned and sliced lengthwise, onto the baguette. Line the bottom of a large glass container with a foil wrapper.

Place a large portion of the shredded lettuce on the bottom of the container. Sprinkle with celery, red onion, carrots, tomato, tomato paste, tomato salad dressing, and grill oil.

Place the salad on a large plate. Top with bacon, peaches and almonds. Top with tomato sauce. Garnish with lime zest.

pretty good, a bit hoisinier than I like but not revolting. I used persimmon blossom honey but actually used almonds. Won't make the same mistake twice.
