3 eggs, beaten
1 cup milk
1 tablespoon butter
2 pounds cream cheese, softened
1 (16 ounce) can cream cheese, room temperature
2 tablespoons soy or vegetable oil
3 tablespoons butter, melted
6 tablespoons unsalted butter or margarine, divided
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup shredded mozzarella cheese
1 (3 ounce) can chopped pecans
Preheat oven to 450 degrees F (230 degrees C). Mix together eggs, milk, butter, cream cheese, soy or vegetable oil, butter, 1 teaspoon butter, 1 cup whipping cream, 1 cup mozzarella cheese, 1 (3 ounce) can chopped pecans. Place 2 sandwiches in a cracker fritter near the bottom of a 2 inch roasting pan.
Place cracker mixture on top of meat sandwich; fill the cracker holes with remaining 1/2 cup of cream cheese mixture. Trim edges of sandwiches. Bake in preheated oven for 25 minutes.
