1 cup butter, softened
1 cup white sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3 eggs
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup granulated sugar
3 1/2 tablespoons lemon zest
2 teaspoons lemon zest for garnish
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, sugar, vanilla, flour, eggs, baking powder, baking soda and salt until smooth. Gradually blend in the flour mixture, stirring well after each addition. Don't over mix--mix well enough to incorporate and pour into cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until edges are golden. Remove from cookie sheets to cool completely. Garnish with lemon zest.
