7 cups plus 1 cup white sugar
2 eggs
1 1/2 cups all-purpose flour
1 cup milk
1 1/2 teaspoons baking soda
3 teaspoons vanilla extract
1 1/2 teaspoons lemon puree
2 tablespoons peach preserves
Preheat oven to 350 degrees F (175 degrees C). Grease two 6x9 inch greased muffin cups.
Beat together the sugar, eggs, flour, baking soda and vanilla extract. Pour batter into prepared muffin cups.
Preheat oven to 350 degrees F (175 degrees C).
Bake in preheated oven for 35 minutes, until toothpick inserted in center comes out clean. Cool for 10 minutes, then flip muffins out onto wire rack and cool entirely.
To make the peach preserves: Quickly grease two 9 inch square pan-size pans.
With spoon, spread peach preserves over each muffin half, then top with preserves and peach top.
