1 cup raisins
1/2 cup butter, melted
3/4 cup white sugar
1/2 teaspoon baking powder
2 eggs
1 teaspoon vanilla extract
1 cup whole wheat flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup flaked coconut
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, mix raisins, melted butter, sugar, and baking powder. Beat in eggs, one at a time, then stir in vanilla. Combine flour, baking soda and baking powder; stir into raisin mixture. Fold in coconut. Pour batter into prepared pan.
Bake in preheated oven for 35 minutes, then remove from oven.
made these for Christmas breakfast, and my husband didn't care for them..so I made a separate recipe for him and ate it. They are great when you are tired of oatmeal or just don't want something sweet.
