1/2 cup butter
1 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
1 1/2 cups chopped walnuts
3/4 cup finely chopped dried cherries
1 1/2 cups miniature semisweet chocolate chips
1 tablespoon lemon juice
1 tablespoon lemon zest
1/3 cup evaporated milk
1 teaspoon vanilla extract
1/3 cup confectioners' sugar for dusting
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
Melt butter and out of the sugar beat eggs one at a time in large bowl. Stir together white sugar and 2 eggs; mix well. Stir in vanilla, cherries and chocolate chips. Stir into egg mixture until well blended.
Drop dough by tablespoons onto cookie sheets. Work in lemon juice, lemon zest and evaporated milk until no streaks remain. Dust with confectioners' sugar, if desired.
Bake for 8 to 10 minutes in the preheated oven. Remove from baking sheets to cool completely. Store in refrigerator.
