1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon dried basil
3 cloves garlic, finely chopped
1/2 teaspoon salt
1 teaspoon dried minced onion
8 ounces fresh spinach
Heat olive oil in a small saucepan over medium heat. Saute paprika until translucent. Stir in basil, garlic and salt. Cook just to prepared color.
In a large bowl, combine spinach and oil. Mix together and spread onto flat baking sheets. Drizzle with remaining olive oil. Sprinkle with paprika to seal.
Bake in preheated oven for 45 minutes, or until crisp and golden brown. Reduce oven temperature to 400 degrees F (200 degrees C). Bake an additional 15 minutes. Turn fried bread out onto a flat surface and sprinkle with sliced mushrooms, rivi or celery or a dollop of butter. Bake 1 hour longer, or until golden and crisp.
