I made these for Super Bowl 50 and they were delicious! I accidentally put the egg mix into the oil and butter instead of out of it, so the omelet/barbecue flavor didn't develop as I cook it and I had to add extra salt. Note of caution: I tried this with both heavy cream and heavy whipping cream and I also substituted white whole wheat tortillas for the corn. These were good but I did think they would be better without it. Couple of eggs removed before use indicated that the omelet/barbecue would have been extremely dry. I am not recommending increasing it, but perhaps increasing the cooking time (and adding a little more time) indicated that it could have been used longer and with more flavors. Couple of eggs indicated a little better dunking/crisping. This would have been perfect for 20 servings. Thanks!

Made these for a Thanksgiving get together and everyone loved them they are very light and super easy!! I did make my own cashew butter and instead of the almond extract I put 1 teaspoon of Jojoba Oil instead. I also cut my banana into tiny balls and dropped them in my pie plate ready to go! Made it just as directed and my dad exclaimed "YUMMY! These are so pretty and so crispy!" I knew I wouldn't be able to resist putting these into the pie, I mean really, really sure that they would turn out wonderful! Thanks for sharing this recipe, it was a hit!
