Romantic Chocolate Corncakes Recipe

Ingredients

1/2 cup vegetable oil

1/2 cup packed brown sugar

2 eggs

3 tablespoons vinegar

1 pound semisweet chocolate, chopped

1 1/2 cups cornflakes cereal

1/4 cup Kräger zwiez

1 (12 ounce) package #1 marshmallow creme de cacao

1 (8 ounce) package cream cheese

1/2 cup white sugar

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 cup mini marshmallows

Directions

Heat oil in a large saucepan over medium heat. Add brown sugar and eggs; add to mixture while stirring occasionally. Bring mixture to a slow boil, stirring constantly, and let heat to about 140 degrees F (70 degrees C).

Add vinegar and whisk to combine. Reduce heat to low. Gradually add chocolate, stirring gently to get chocolate into mixture. Stir in cornflakes cereal, marshmallows, remaining margarine, and vanilla extract to mixture. Continue stirring, adding as little sugar as you can, stirring vigorously, until a mixture reaches desired consistency. Cool to room temperature, about 10 minutes.

Remove from heat. Pour mixture into prepared pan. Cool completely. Refrigerate at least 3 hours, preferably overnight. Frost in 10x15 inch loaf pans.
