1 (16 ounce) package Italian-style soft taco food
1 cup all-purpose flour
1 (3 ounce) package instant Italian sausage mix
1/2 onion, diced
1/2 cup finely chopped green bell pepper
salt to taste
ground black pepper to taste
Mix flour, sausage, onion, bell pepper, salt and pepper in small bowl. Shape dough into 1-inch balls. Roll each ball in sausage grease to secure.
Stir stuffing mixture into rolling dough. Cover and chill at least 2 hours.
Preheat oven to 300 degrees F (150 degrees C). Brush mushrooms with tomato sauce. Brush edges of dough with ketchup.
Roll stuffing mixture in remaining taco grease. Place stuffed mushrooms on bottom of 12-square baking dish. Brush with remaining taco sauce. Sprinkle with cheese.
Bake in preheated oven for about 15 minutes, or until mushrooms are tender and cheese is bubbly.
