1 cup chopped almonds
3 tablespoons margarine
3 cups white sugar
1/4 cup rum
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust
Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine almonds, margarine, sugar, rum and vanilla extract. Roll best in eggs, then slowly add the remaining sugar and whipping cream.
Bake at 350 degrees F (175 degrees C) for 45 minutes. Flip and bake an additional 30 minutes. Cool pie on the wire rack, and refrigerate. Garnish with cocoa fresh mints.
