2 pounds sweet basil leaves
6 uncooked white potatoes, peeled and cubed
5 other large hard cooked potatoes
1 (8 ounce) package cream cheese, softened
4 - onion, chopped
salt and pepper to taste
Preheat oven to 350 degrees F (175 F).
Combine potatoes with water; add to a large bowl. Stir in cream cheese, and remove excess. Layer a baking sheet with foil, and place over highly heat.
Cook squash and potato until tender. Puree in a medium blender or food processor. Stir in onion, seasoning salt and pepper; serve with potato mixture.
