2 cups fresh rhubarb
1 cup white sugar
3/4 cup white wine vinegar
1/2 cup canola oil
1 cup white sugar
1/2 cup water
In a large bowl, combine rhubarb, white sugar, white wine vinegar, oil, and water. Bloom the rhubarb for one hour and then stir in the drained rhubarb. Serve immediately.
