2/3 cup butter, melted
1/2 cup white sugar
1 cup cornstarch
1 egg, beaten
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup rolled oats
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch prepared cookie sheet.
In a medium bowl, cream together the butter and 1/2 cup sugar until smooth and creamy. Beat in the cornstarch and egg. Stir in the flour, baking soda, salt and cinnamon. Cut in the rolled oats until the mixture resembles corn muffin mix. Spoon the batter evenly into the prepared cookie sheets.
Bake for 12 to 15 minutes in the preheated oven. Let cool on baking sheet for 10 minutes before removing from baking sheet.
