Canned Pesto Recipe

Ingredients

2 tablespoons olive oil

1 (8 ounce) package cream cheese, softened

3 tablespoons grated Parmesan cheese

1/2 cup grated Romano cheese

salt and pepper to taste

1/2 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup cottage cheese

1 cup Parmesan cheese

1/2 cup grated Parmesan cheese

1/2 cup dry bread crumbs

1/4 cup grated Parmesan cheese

Directions

In the pan of a food processor, combine cream cheese, Parmesan cheese and Romano and salt and pepper to taste. Process until very smooth. Pour mixture over the cream cheese layer and cover completely. Let stand until almost set, about 30 minutes.

In a medium bowl, combine ricotta, mozzarella, cottage cheese, Parmesan and Parmesan cheeses. Mix well and transfer to a 1 quart oven-safe bowl. Refrigerate for 5 hours, or until set.
