Tuna Almond Pudding Recipe

Ingredients

1 cup frozen or low-fat buttermilk biscuit mix

1 1/2 cups heavy cream

1/2 teaspoon vanilla extract

1/2 cup chopped dried dates

1/2 teaspoon nutmeg

1 teaspoon ground dried dill (optional)

1/2 cup mashed cooked or frozen banana

1/4 cup crushed almonds

1/2 cup whipped cream

Directions

Mix together biscuit mix and cream. In an electric blender, blend on medium speed until soft peaks form. Do not strain dough. Stir in dates, nutmeg and dill. Continue blending and set aside 1/2 cup of dough for pastry.

Pour dough into a large sauce pan. Place cooked banana in and beat until bananas are soft. Stir in crushed almonds and whipped cream. Slowly pour into sauce pan. Heat oven to 325 degrees F (165 degrees C).

Divide dough into 10 pieces, and form into ball about 1/2 inch thick. Place on prepared baking sheet. Cool completely, about 45 minutes. Reserve cooled ball.

I gave it 4 stars because it was very tasty but I would double the cream cheese and broth. I like more sauce with my food.
