1/2 pound bacon, chopped
1 egg, beaten
1 small yellow squash, diced
6 minced garlic cloves
1 cup uncooked long-grain white rice
1 cup water
1 egg, beaten
2 tomatoes, finely chopped
1 teaspoon salt
2 teaspoons ground black pepper
Preheat broiler. Grease an 8x8 baking pan or casserole pan.
In a large bowl, combine bacon, egg and yellow squash. In a separate bowl, combine rice, water, broth, salt, pepper and onions. In a third bowl, whisk together water, tomato, salt and pepper. Pour into prepared pan.
Broil 1 hour, until browned; turn and place pan onto a cold plate to cool completely. Serve hot.
