Easy Mac and Cheese Soup Recipe

Ingredients

1 1/2 pounds beef stew meat

4 teaspoons onion powder

2 teaspoons dried basil

1 teaspoon salt

2 teaspoons ground black pepper

6 cups vegetable broth

1 cup chopped celery

1 cup chopped black-eyed peas

1 cup thinly sliced carrots

2 cups chopped celery

1 cup grated Parmesan cheese

1 (8 ounce) package frozen mixed vegetables

1/4 cup olive oil

Directions

In a large pot over high heat, combine meat, onion powder, basil, salt and pepper. Simmer and stir until all mixture is dissolved. Reduce heat to low and add broth, celery, peas and carrots. Simmer over medium low heat, stirring occasionally. Cover with water and keep warm for 30 minutes.
