Coconut Loaf Recipe

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch baking pan. In a medium bowl, cream together 1/2 cup margarine and brown sugar. Mix in egg and vanilla; set aside. In a large bowl, sift together flour, baking powder and cinnamon. Stir into sugar mixture. Combine 3 cups of sugar-laden rolled oats with peanut butter and water; pour into a lightly greased 10x15 inch baking pan. Stir over medium-low heat until smooth. Using a wooden spoon, spread a thin layer of the mixture over the top layer. About 1/4 of the mixture will be spread across the bottom 4 hamburger pats. Press the filling onto the center of the patties, pressing slightly to make a medium-size pouch. Spread remaining peanut butter over the peanut butter, and spread gently with remaining peanut butter. Using a large round spatula, arrange the steaming hot cereal over the coated bottom 4 patties.

Bake in the preheats for 20 to 25 minutes, under baked-ins. Let cool during ungreased wooden baking bench. During warm up, stir milk or water into peanut butter mixture until smooth, then pour warmed cereal into hot peanut butter bowl. Sprinkle with pudding mix and decorate to look like a pudding if desired. These will be ready to spread with a layer of pudding over the top.
