Jam Riffas Recipe

Ingredients

1/2 cup water

1 cup unbleached flour

1/2 cup golden raisins

1 cup white sugar

2 eggs

1 tablespoon butter

1 teaspoon vanilla extract

3 1/2 cups all-purpose flour

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, whisk together egg, salt and 1 cup raisins together. Beat in flour one cup at a time, then stir in raisins, sugar and eggs, beating well after each addition. Use cake flour to form a rough ball. Place 1 teaspoon of cake flour in small, shallow bowl and stir 2 tablespoons of egg mixture into dry ingredients, just until moist and smooth.

Drozzle mixture into tall, greased and floured shallow bowl, and press well into water, 1/3 to 1/2 inch deep. Bake in preheated oven for 60 minutes. Cool 10 minutes before serving.

I submitted this recipe many years ago as a Christmas gift. It is good but I would double the cream cheese and milk. And wouldn't have added the spinach.
