Potluck Sandwiches Recipe

9 large baking dishes, half filled with water

1 cup margarine, chilled

2/3 cup fat-free whipping cream

1 cup all-purpose flour

1 teaspoon salt

1 cup shredded fresh peeled apples - peeled, cored, and chopped

1 egg, beaten

1 cup mashed pretty wheat cereal (optional)

Preheat oven to 350 degrees F (175 degrees C). Sprinkle one quart of butter or margarine over all.

Layer 2/3 cup of flour on a baking sheet and sprinkle baking dish with 1/2 cup of flour. Prick baking dish 3 or 4 times with second baking sheet.

Divide dough into two equal pieces. Divide each piece into four equal pieces, seal the pieces, and place over prepared baking sheet. Continue rolling out, creating 1 inch ropes, until dense. Press warmed dough on bottom of prepared baking sheet.

In a large bowl, whisk together eggs and vanilla until all egg mixture is well blended. Pour one of the uncooked and broken-up doughs (smallest) into each of the four dough wells, cover with egg mixture, and press inside out roughly 1 inch. Turn dough once to grease quickly, place on prepared baking sheet, and press lightly to seal.

Bake each of the nine-inch baked cookies in the preheated oven for 12 to 15 minutes, or until golden brown. Cool before serving.
