3 medium heads cabbage, sliced
1 small onion, thinly sliced
1 small green bell pepper, thinly sliced
3 medium carrots, sliced
1 medium cauliflower, halved
8 medium potatoes, peeled and cubed
5 medium tomatoes, sliced
1/2 cup chopped green onion
1/4 cup ketchup
1 pinch salt
1 (6 ounce) can chicken broth
1 cup tomato paste
1 cup sliced fresh mushrooms
Cut the cabbage into 1 inch pieces, and place them in a large bowl to dry. Place pieces of carrot and onion around the edges of the cabbage, roughly. Place cilantro into the center of the casserole.
In a large pot combine the cabbage, carrots, cauliflower, potatoes, tomatoes, green onion, ketchup and salt. Bring to a boil, and cook for 5 minutes. Reduce heat, and simmer for 5 minutes. Remove from heat, and stir in the broth and tomato paste. Return to a boil, stirring constantly for 2 minutes. Reduce heat to low, and simmer for 5 minutes. Stir in chicken broth and tomato paste, and cook for 2 minutes.
Return to a boil, stirring constantly, and cook for 5 minutes. Add the mushrooms, and cook for 2 minutes.
Good stuff on brioche bread. I used a can of whole tomatoes, chopped, with the tomatoes and green peppers. Gave it the kick, but it's really peachy and pretty without. I had forgotten to drain the tomato juice, so it was probably just a thing. I'll be making this again.
