Lightning Cream Recipe

Ingredients

1 cup orange juice

1 cup lemon juice

1 1/2 cups white sugar

1 teaspoon lemon zest

1 teaspoon vanilla extract

1 cup milk

1 cup heavy whipping cream

1/4 cup orange juice

1 cup margarine

1 (8 ounce) package shredded Cheddar cheese

Directions

In a blender combine orange juice, lemon juice, sugar, lemon zest and vanilla extract. Juice should be about the consistency of lemon cake. Transfer mixture to a narrow container and place in fridge. Chill for about 1 hour, or until thickened.

In a medium bowl, beat cream until stiff. Beat in orange juice and margarine. Beat in 1 cup of whipped cream. Beat in 1 cup orange juice. Fold in cheese. Pour cream into narrow container. Place dollop of whipped cream on top of cream.

I made this recipe with light coconut milk, and it was fantastic! I served it over easy bundt cake for a holiday dessert!

I substituted fresh whipped cream for the evaporated milk, and I also added plain greek yogurt (not the sour cream) because that's what I had on hand. It turned out fantastic, just like a homemade icing. I wouldn't change a thing, it was excellent. Thanks!

I made it the other night and I didn't have enough butter, so I didn't omit it -- I poured it all into a measuring cup and then added the egg... yum, great taste! I did it in a food processor, since my machine doesn't have the blade. No need to hold your butter!
