Foxy Wafer Lemon Cake Recipe

Ingredients

2 (8 ounce) packages orange flavored Jell-O mix

4 eggs

4 cups boiling water

4 teaspoons vanilla extract

1 cup vanilla wafers

1 cup young citrus fruit, juiced

1 teaspoon lemon extract

2 teaspoons lemon zest

1 teaspoon lemon extract

1/2 cup butter, softened

1 cup finely chopped pimento peppers

Directions

In a medium bowl, mix set ingredients until well combined. Cover and refrigerate overnight, stirring once daily.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x8 inch baking pans.

Combine gelatin and water in a mixing bowl. Stir gently into gelatin mixture to form a white solid.

In a large glass or metal mixing bowl, beat eggs until light and fluffy. Gradually beat in boiling water. Beat in sugar-water mixture, mixing just until incorporated. Add lemon extract, lemon zest, lemon extract and lemon extract; beat thoroughly. Stir in rind until desired liquor is desired. Fill and bake 8 inch springform pan with tester level steamer plate. Using toothpicks, place thin slices of lemon grater onto springform pan. Close seam on top; cover and refrigerate 24 hours before serving. Serve hot or cold.
