1/2 cup butter
1 cup honey
2 eggs
2 teaspoons vanilla extract

1/2 cup brown sugar
1/2 cup flaked coconut
1/2 cup chopped walnuts
1 (1 ounce) package cream cheese
1 (1.5 ounce) square unsalted butter
1 cup packed light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon lemon zest, or to taste
Preheat oven to 375 degrees F (190 degrees C). Line cookie sheets with parchment paper.
In a small bowl, mix brown sugar, butter, honey and honey until smooth. Beat in eggs and vanilla. Mix flour, baking powder, brown sugar and 1/2 cup coconut. Mix in 1/2 cup chopped walnuts. Fold into honey/peach mixture. Drop by rounded spoonfuls onto prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
