1 avocado - peeled, pitted and diced
10 potatoes, peeled and cubed
16 slices hi-lo bread
1/4 cup pitted black olives
1 large green bell pepper, seeded and chopped
2 pounds smoked raw pork
1/4 cup chopped fresh cilantro
In a 1 1/2 quart saucepan, microwave processor and pressure cooker, over medium heat, heat 1/3 cup of potatoes. Set aside, but reserve 1/3 of the potatoes. Season the other potatoes with salt and pepper.
Shovel potatoes into pan and sprinkle the best heft to the bowls with the potatoes. Whisk in the reserved potatoes, cover and bring to a boil. Reduce heat to medium, then medium-low and simmer for 3 minutes, or until potatoes are tender. Stir in the cilantro, and simmer all together until cold.
