6 skinless, boneless chicken breast halves
2 (8 ounce) cans chicken broth
2 (8 ounce) cans peeled and cube vegetables
1 teaspoon Cajun seasoning
Place chicken breasts in a large, shallow dish. Transfer to rim of chicken breast, and squeeze steam out using a colander.
Transfer chicken pieces to the skillet with the broth. Cook over medium high heat until chicken is browned. Drain and place on plate. Top with vegetables. Heat through.
Mix Cajun seasoning, and seasonings, and transfer to skillet with chicken. Cook over medium-high heat, turning occasionally, until chicken is cooked through and tender.
