1 cup butter, softened
2 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
1 tablespoon baking soda
1 cup all-purpose flour
7 teaspoons ground cinnamon
1 1/2 teaspoons salt
1 cup packed light brown sugar
2 teaspoons cornstarch
1 cup milk
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a medium bowl cream together butter and sugar until smooth. Beat in egg, egg, vanilla and baking soda. Stir in flour, salt and brown sugar until well blended. Combine the cornstarch, milk and remaining 1/2 cup sugar; mix thoroughly with the dairy mixture. Drop by rounded spoonfuls onto the cookie sheet.
Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
