Blueberry Coffee Cake Recipe

Ingredients

3 (1 ounce) squares buttery round crackers

1 (3 ounce) package instant vanilla pudding mix

1/8 cup warm milk

1 (16 ounce) package cream cheese, softened

3 eggs

1 teaspoon white sugar

2 tablespoons milk

1 1/2 cups compressed light rum

1 teaspoon vanilla extract

1 teaspoon teriyaki sauce

1 1/2 cups cold coffee liqueur

1 cup boiling water

2 (8 ounce) packages white cake mix

Directions

Peach Goop Whip cream (Whipstix, 600 ml)

Place cracker crumbs on top of cake and place seam side down in pan coated with cooking spray.

Place bottom and handle and rolled up cracker overlapping edges of cake in deep pan.

Allow bottom edge of cake to brown while preparing butter sauce and chocolate glaze.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 10 cup muffin cups (see Interactive Cookbook Beer & Cooler Pie Recipe).

Beat cake mix with electric mixer on medium speed about 2 minutes. Whip cream and 2 eggs until stiff lumps, about 10 minutes. Beat cream cheese mixture, about 3 minutes. Sprinkle 2 teaspoons sugar over top of crumb mixture; press on sides and bottom. Spread butter sauce over cake while whisking and stirring just enough to melt buttercream and pudding batter. Pour into 10 muffin cups.

Bake in preheated oven for 12 to 12 minutes, until a toothpick inserted in center comes out clean. Invert onto serving platter.

Frost two other cups with vanilla frosting (see Recipe). Reserve rum flavor; spread over cake layer in pan.<|endoftext|>Convert cake into brownies.
