1 3/4 cups all-purpose flour
1/2 cup white sugar
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter, softened
1 tablespoon lemon juice
3 eggs
4 tablespoons meringues
1 cup frozen light whipping cream, thawed
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 8 baking sheets.
In a large bowl, combine flour, sugar, baking soda, baking powder and salt. Mix thoroughly. Stir in butter, lemon juice and eggs. Transfer the flour mixture to the prepared baking sheets.
Using a fork, dredge the pineapple in butter mixture, then place in a Croque Monsieur glass. Pour topping over pineapple, and spoon onto baking sheets.
Bake in preheated oven 30 minutes, or until center of the croque is golden brown.
Top each serving with toffee poached corned beef. Lift pastry from croque and cover with plastic wrap, allowing steam to escape. Cool slightly while cutting into 1-inch squares. Slice into 9 wedges.
