1/2 cup sliced fresh mushrooms
1/2 cup sliced carrots
1/4 cup chopped celery
1 tablespoon olive oil
1/8 cup crushed red pepper flakes
2 cloves garlic, minced
1 tablespoon dried basil
3 green onions, sliced
1 (1 ounce) package condensed mixed vegetables
1/4 cup chopped fresh bell pepper
In a medium bowl, combine mushrooms, carrots, celery, olive oil, red pepper flakes, garlic, basil and green onions. Mix well and cover. Shape into 1/2 inch meatballs. Chill in refrigerator.
Heat olive oil in a medium bowl. Sprinkle mushrooms and carrots over vegetables, then top with bell pepper and sausage gravy. Cover and refrigerate at least 2 hours or until vegetables are tender.
