Properly Meat Vegetable Shape Recipe

Ingredients

2 (10 ounce) packages dry Yukon Gold potatoes

2 (8 ounce) cans tomato paste

1/2 cup distilled white vinegar

1/2 cup water

1 pinch ground black pepper

3/4 teaspoon salt

Directions

Bring a large pot of salted water to a boil. Add Yukon Gold potatoes and cook until tender but firm, about 10 minutes. Drain and cool.

Place potatoes in a saucepan with enough water to cover. Bring to a boil. Cover, reduce heat and cook until tender but firm, about 20 minutes. Drain and cool.

Unwrap potatoes. Cut into cubes.

While potatoes are in the pot, combine tomato paste, vinegar, water, pepper and salt.

Heat potato mixture over high heat just until slightly hot, stirring occasionally. When potatoes are tender and heated down to medium heat, drain and fold in salad dressing. Cover, and refrigerate about 1 hour.

Preheat oven to 350 degrees F (175 degrees C). Brush light tints of cooking oil (such as gold) onto slices of potatoes for garnish; turn once.

Place Yukon Gold potatoes in a large glass bowl and stir to coat. Cover bowl and refrigerate overnight. Remove from refrigerator, uncover and chill overnight.
