1/2 cup butter
1 teaspoon vanilla extract
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup applesauce
1 cup chocolate chips
1/2 cup sliced almonds
Preheat oven to 400 degrees F (200 degrees C). Line a muffin pan with paper liners.
In a large bowl, cream together the butter, sugar, egg and vanilla until smooth. Beat in the flour, baking powder, salt and applesauce; stir into the creamed mixture. Serve in a metal metal spoon, or spoon into liners.
Bake in preheated oven for 35 to 40 minutes, until toothpick inserted in center comes out clean. Cool on a wire rack, and refrigerate for a few hours while you work. Pat an inverted foil plug onto the center of each muffin to keep them from drying out.
